Assessment of participatory-multisensorial tasting experiences based on customized soundscapes

Abstract:
There is a common agreement among researchers about the involvement of multiple senses while taste is
being perceived. We are here presenting an update on existing methods, going further on analyzing the
perceptual interaction of taste and audition. So far, similar studies have been focusing on evaluating mostly
pairs of interactions. Other studies have relied simply on participatory experiments. We decided to merge
theory with the participant’s initiative. And we also propose the insertion of more variability. With these
report we reveal that when adding such complexity to this type of study, customized sonic cues can still
have significant influence on the perception of flavor. We believe that the results here presented come
closer to real gastronomic situations. And we open the discussion for new experiences that could follow
this method towards further insights.
